Justly reknown for its quality Shiraz and Rhone Valley varieties, the Barossa Valley produces equally good but less lauded Cabernet Sauvignon. Prime Cabernet sites are not abundant and their owners are sitting on a gem. The Cabernet site on the Moolanda Vineyard straddles a small ridge. The low points are deep black cracking "Biscay" soils of varying depth and the higher points sandy red clay loams over rock. Row orientation is east-west.
We are proud of our Cabernet Sauvignon. Two different clones grown on a variety of soils produce moderately sized bunches with small, thick skinned berries. We pick the Cabernet 2 to 4 weeks after the Shiraz. The wines, invariably intense and varietal, display characteristically complex aromas. The palate, firm with cassis, soft black fruits, anise and tarry flavours, finishes with fine grained but firm tannins. Our Cabernets are substantial wines, never thin and austere. Matured for up to 18 months in French oak, they age magnificently in the bottle and cellar well for up to 10 years.

Generosity and warmth are the attributes the warmer year 2006 has added to this proud substantial cabernet. Loads of intense flavours, a wave of very varietal cassis, dark berries and black cherries, leafy notes and anise combine with plums and more robust dark chocolate,mocca and tarry flavours. A complex delight with a long and lingering finish, to which the fine grained tannins contribute. We recommend this wonderful cabernet with elegant and classical meat dishes, or with amature cheese.
22 mths in French oak. The wine starts drinking well between two and three years and will cellar for up to 10 years

A proud substantial cabernet, intense, varietal and complex – one from the top-shelf! It has the characteristical aroma of cassis with leafy overtones, the palate is firm with succulent ripe soft black fruits and cassis, plums and dark chocolate, anise and tarry flavours with a firm, controlled, varietal and fine grained tannic finish. We recommend it with well flavoured elegant meat dishes. Limited Production.
